Asparagus mascarpone tart with green asparagus and bacon
It's time again for a tasty tarte flambée. Crunchy thin dough, delicious toppings - there is hardly a better end-of-the-day meal. And at the same time, it's one of the last opportunities for delicious green asparagus before the season ends. The result is a green asparagus mascarpone tarte cake with bacon and spring onions. A wonderful combination, fresh and crunchy and creamy and spicy - everything you need. If you prefer vegetarian, just leave the bacon cubes, no problem!

Green asparagus mascarpone tarte with bacon and spring onions
for 2 large or 4-6 small tarte flambée
For the dough:
225 g flour
2 tablespoons olive oil
1 egg yolk - 100 ml lukewarm water
1/2 teaspoon fine sea salt

500 g fresh green asparagus
3-4 spring onions (eg red spring onions)
1/4 bunch smooth parsley
100 g mascarpone
100 g small diced bacon or bacon in cubes of salt
Flour, olive oil, egg yolk, water and salt for a few minutes by hand or with the dough hook knead the kitchen machine until a smooth, elastic dough is formed. Wrap in foil and let rest at room temperature for about 20-30 minutes.
Cut off the ends of the asparagus and, if necessary, peel the bottom third of the sticks. Wash the bars and cut into slices of about 5 cm.
Bring some water to a boil in a small pot with salt and add the asparagus pieces. Simmer for 2-3 minutes, then drain and drain.
Clean the spring onions, cut off the root ends and cut the onions into thin rings. Finely chop the parsley.
Preheat the pizza oven for 10 minutes at 2 1/2, alternatively preheat the oven to 230 ° C and lay out a baking tray with heat-resistant baking paper.
